春雨下AGURA-東京AGURA


復活節假期天公不做美,持續下著雨,本想行山,也要取消,
唯獨和食友一起聚餐就是例外,因為可以在店內進行XD,由食友安排下,在AGURA舉行私人包場吃拉麵,,所以時間不能在正常營時間,只能下午3時正式開始,早在這裏開始第一次已經光顧,沾麵水準也是香港頭位,所用的食材大部份來自日本以及工具則是價值昂貴,


這裏的湯底用上魚介,豬筒,豬手,雞等材料去煮成美味湯底,當然我也希望這裏可以做蕃茄魚介等之類沾麵湯底,不多不少受了東京沾麵文化所影響,




沾麵湯底以醬油和塩味為主,醬油就充滿豚骨油脂味道,塩味就有橄欖黑椒油輔助,相對醬油比較稀一點,但味道帶有魚介以及黑椒味道,層次變化豐富,吃得非常滋味,麵條偏硬,不錯,糖心蛋據說放在豚骨湯一齊煮,只是它對半熟蛋味道起不到明顯變化,但蛋呈現半熟流心,比起不少地方做得好,叉燒現在不是上次吃那款,都算肥美,自己個人認為最初圓型叉燒做得最佳,是日蒽不是來自日本貨,因為貨源不穏定,蒽對拉麵湯底都頗為重要.


湯麵

湯麵質素不會弱過沾麵,印象最深刻就是幼麵比上次來吃硬身,整體上次是進步了不少,如果有最初的叉燒相信我會更喜歡,店主要衝著飛回日本傾食材,有半個月不會見到他,希望會有新口味拉麵,這裏在香港已經值得一吃!
